Depending on where you live plastic, or poly, is typically installed as a vapor barrier to prevent moisture from entering the wall cavities or into the attic. You DO NOT want air flow, as it brings moisture with it into these areas. That is essentially what causes the mold. If the interior of your home was wrapped in plastic with the plastic INSIDE of the insulation (right next to the wallboard), that is proper, and is there for a vapor barrier to the unheated area. If it is as you indicate, then your vapor barrier is on the WRONG side of your insulation, and can cause mold issues. I’ve never heard of that being done.
