Green Chillies: are they just unripe chillies?
I have a chilli bush at home- i have never used the green ones I’ve always waited for them to turn red. Can I use them green?

Sometimes, yes, sometimes green is the variety of the chile, all the way through it’s life cycle……it all depends on the chile…..for example, jalapenos come in both red and green and all colors and hues in between…..AND you really can’t judge the "hotness" of any chile until you’ve bitten into it…..I’ve made Chiles Rellanos before (a cheese stuffed poblano chile, covered in egg batter and fried-YUM) that have been hotter than hell…..just happened to be the season for "hot" that year…..Enjoy!!

Yes they are unripened fruits. And yes they can be used before they ripen. I use the chilies from my plants all the way from the green through the reds and in some cases purple stages.
I cannot eat the green Bell Pepper however. They upset my stomach too much. I only use them after they have ripened.
Yes, they are not as hot as when they ripen on the bush but they still have flavor and a bit of heat.
Green chile peppers are large, mild chiles are available in most local grocery stores. The green chile pepper may also be referred to as the Anaheim pepper, and is related to the New Mexico green chile. You slice them, dice them, peel them, puree them; people who like to cook Mexican dishes find many uses for them. They are commonly roasted.
